Champignon creme! Oh my, what can I say about this sauce? So, rich and comforting and its vegetarian. For this sauce we use a mix of several mushrooms if I can get my hands on them: button, cremini, portobello and oyster. We sauté the mushrooms, with garlic, thyme and white wine. We can finish the dish with either whole cream or coconut cream if you’re lactose intolerant. We can also make it lighter on the calories and finish it with chicken stock. Mushrooms shrink quite significantly when cooked, like 90% shrinkage. Hence, this dish may feel small or insufficient even when we use 8 packets or 2kg of mushrooms but a little goes a long way as its very rich. Its a beautiful sauce to accompany heavy meats like our beef filet, goat, lamb and even chicken dishes. The single-2k portion is meant as a table sauce for this. It can also serve as a main for vegetarians as it can accompany rice and potatoes.
