Description
This recipe has come about because we produce so many leeks on the farm and retailers always seem to have an issue with our sizes. Its too big, its too long, its too small! I don’t want to say what I think about their feedback so I had to come up with something to do with our lovely delicate vegetables.
This recipe makes such a delicious light lunch or starter. Its super fresh and summery but could be enjoyed all year. I love everything about it, from the salty capers to the fragrant aniseed of the dill and the delicate sweetness of the poached leeks.
